Some time ago, a friend shipped me a mixed case of Rieslings from the Finger Lakes region of upstate New York. (This was back in the Dark Ages, when shipping wine from New York meant handing it over to a freight hauler, waiting several weeks, and paying as much for the transit as the wines.) They were all delightful, and I couldn't stop wondering: How do they do that?
