To replicate distinct profiles delivered by the finest cooperages, the StaVin research team initiated our barrel fingerprinting project, integrating quantitative scientific analysis of barrel extractives with qualitative sensory panels of leading winemakers. Applying analytical and sensory data to traditional hand-fire toasting captures the essence of desired barrel profiles. Process includes careful quality control, three year plus seasoning on staves, meticulous hand-fire toasting programs.
