What's in it? Where will it go? Fermenting with wild yeast can be risky business, but for many daring winemakers, it's a risk worth taking.
 
Some winemakers get their inspiration about yeast choices from product catalogs, some from experimental results reported in enology journals, some from mimicking successful producers in other countries. A few brave souls take their cues from Maurice Sendak's children's classic, Where the Wild Things Are.
